June already

Well, at least I have a garden planted to show for the weekend. And some knitting. I made a pie, out of storebought ingredients, but here's the recipe just for grins and giggles. It's completely bad for you, but it tastes pretty good, if you can stand Cool Whip.

Lemon Poof Pie

1 Keebler shortbread pie crust
2 pkgs lemon instand pudding mix
1 normal sized tub of Cool Whip
2 cups of cold milk
handful of Golden Oreo cookies

Mix the lemon pudding into the milk with a whisk. After about two minutes, scoop out about a cup and a half of the pudding and put it in the pie shell. Now take half of the Cool Whip (it's defrosted, right?) and mix it with the remaining pudding, gently, until it's all combined. Now, put that mixture in the pie crust, and smooth it out. Top the pie with the remaining Cool Whip and strategically place the cookies so each piece you plan to cut will have a cookie on it. Refrigerate the pie for a couple of hours and voy-lah, dessert.

You can use Lemon Cooler cookies instead of the Oreos, if you can find them where you live.
